- 5 Lb Pork Shoulderbutt
- 1 Cup of oil ( oil of your choice) recommendation (Mazola Oil)
- 2 Onions
- 1 Tbls of Cumin
- 5 Cloves
- 3 Garlic cloves
- 8 Podo California Chiles
- 3 Stems of Oregano
- A pinch of Ginger
- 2 Cups of water
- Salt to your liking
Blend the Cumin,Cloves,Garlic,Ginger,Oregano,Chiles,and Salt.You want the texture of you marinade to be creamy ( add more water if need to get the textured desired).Marinade Pork with your sauce ( to give it a richer taste leave your Pork with marinade in fridge for 40 min before cooking).
Warm up oil in medium heat, cut one whole onion into fourths and add to the oil. Let the Onion sweat allowing it to release flavor.Once your onions have been sweating for about 1 min you can now add you Pork.You want to leave the meat cooking for 45 min to 1 hour. Remember you are cooking with pork and you want you meat to be cooked thoroughly. Wile you let your meat cook you can start by making your Salsa.
- 1 Lb Green tomatillos
- 2 Cloves of Garlic
- Salt and Pepper ( to your liking)
- Dry Red chiles ( you can also by fresh just remember you will have to roast them and the odor they release is very strong. I would recommend getting them already dry )
Start by boiling your Tomatillos until fully cooked.Once fully cooked you can start by placing all of your ingredients in your blender and blend way. You want all the ingredients to be fully combined and Listo! you have a Yummy salsa that goes great with your tacos. Remember you are cooking for yourself so experiment with the ingredients and do it to your liking.
Once your Pork is ready you are ready to plate. Use your favorite Corn Tortilla grab your meat and your Salsa, garnish with some cilantro, onions and a little lime.
