Burrito Bowls

fullsizeoutput_1f9Burrito Bowls are very simple ,quick and easy meal to make, when it comes to burrito bowls you can make any way you like it. This is one of the many way we enjoy it.


  • 1 cup if rice 
  • 3 chicken breast 
  • 1 Tomato 
  • 1 can of corn 
  • 1/2 purple onion 
  • 2 cups of Spinach or Green mix
  • 2 Tbls of sour cream 
  • 2 Tbls of Cheese 
  • 3 Tbls of Salsa 

I always start by cooking the rice for 1 cup of rice you add 2 cups of water, let the rice cook on low heat or in rice cooker. Continue by chopping the tomato, and onion into small squares. Open the can of corn and in a roasting pan begin to roast your corn, this gives the corn a deeper flavor. Rinse your green under cold water and place them on the side allowing them to dry. Season your chicken with some salt and pepper to your liking and cook on medium heat for 6 to 7 minutes on each side, once done let them cool and cut into squares. In a bowl start assembling your burrito bowls adding the ingredients including your cheese, salsa and sour cream. If you are Vegetarian you can discard the chicken, Sour cream and cheese this can be great that way as well . When I can’t think of anything to make for lunch or dinner this is always my go to.
