Low Carb Noodles with Stuffed Chicken

Having a low carb diet as been an adventure for sure, but it has been great trying to find different ways to eat the foods I use to love. One of my true loves is pasta I LOVE PASTA!! But lets be real pasta is not that great for you and then I found Miracle Noodles. They are amazing not only are they only 3g of carbs but they taste just like regular pasta. I hope you enjoy this recipe and remember you can always reinvent your favorite foods to be healthier !!!



  • Miracle Noodle


  • 1 Chicken Breast
  • 2 slices of Bacon
  • 1 slice of Mozzarella


  • 1/4 Cup of Heavy Cream
  • 1/3 cup of Milk
  • 2 Tbsp Butter
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 1/2 tsp of garlic powder
  • 1 tsp of Italian Seasoning
  • 1/4 cup Parmesan
  • 1 to 2 Green Chilies (optional)

In a sauce pan mix cream,milk,butter,salt,pepper,garlic powder,Italian seasoning, and parmesan. Mix until well combined, remove it from the stove and into a blender if you decide to use the green chiles you want to add them at this point. Blend the mixture you want a creamy smooth texture, once done place to the side .

Preheat oven to F 375, you want to butterfly your chicken and pound the chicken breast you want to do  this to make your chicken thin. Season your chicken with salt and pepper to you’re liking, add your bacon ( tip: cook your bacon before hand) and your mozzarella. Roll you chicken and place it in the oven for 25 to 35 min.

To prepare the Noodles you want drain the water that comes in the packet, rinse the pasta for 6 to 7 mins (the fishy smell will go away and will not effect the taste of the pasta) On a pan place the pasta it is very import that you don’t add any oils or butter to the pan let it cook by its self, it won’t stick to the pan. Once you have let it cook in the pan for about 10 min, its ready to be served. I added pepper flakes because to me it can never be spicy enough .
