Low Carb Lemon Cupcake

fullsizeoutput_6f3This lemon cupcakes are sooooo good you can’t even tell they are low carb. Has you can see I cut them into small pieces, and had them with a low carb ice cream. I loved them they where so delicious and the great thing about this recipe is that you came make them to any flavor you wish. Just keep in mind that this recipe is will only be enough for 3 cupcakes, if you would like to make more double the recipe.


  • 1/4 Cup of Blanched Almond Flour
  • 2 Tbsp of Erythritol
  • 1/2 tsp of baking powder
  • a pinch of salt
  • 2 Tbsp of melted Ghee
  • 1 large egg
  • 1 tsp of Lemon extract (or any type you would like)

Pre heat oven to F 325 , in a stander mixer or mixing bowl combine flour, erythritol, salt  and baking powder making sure they are well combined. Add egg, melted ghee, and lemon extract, mix until you have smooth batter. Place your mixture inside cupcake molds or small ramekins bake for 15 to 20 min or until a toothpick comes out clean.
