Mac and Cheese is an American staple and I mean who doesn’t like Mac and Cheese. This is something I do when I am craving that cheesy goodness. This is great for anyone that is fallowing a low carb diet, or for anyone that would like an alternative.
Preheat oven to 375 F. Cut your cauliflower, spinach and mushroom into small bitting pieces and wash them letting them fully dry. In a small sauce pan on medium heat start by letting your butter melt completely,once melted add you heavy cream. Let the butter and cream come to a slow boil, add your parmesan, monterey jack, cheddar, and cream cheese. Make sure you mix well letting it cook for 2 to 4 min , once done add your salt and pepper to your liking.
